So I've been craving creamy baked mac & cheese for weeks now. My Darla sent me the recipe for-ever ago, and now I can't find it. We tried making it at Christmas (without a recipe that is soooo not the same) and it tasted not-so-good. So I've been scouring the good ol' net to see what I could come up with... and I'm proud to say - I FOUND IT!! I'm going to drag Butch to the store tonight for the ingredients and I'm whipping out this bad boy for dinner!!

Creamy Baked Macaroni & Cheese 
2 cups uncooked elbow macaroni

1/2 cup butter, cubed

1/2 cup all-purpose flour

1 3/4 cups milk

1 cup (8 oz) sour cream

4 oz. processed American cheese (Velveeta)

4 oz. cream cheese

1/4 cup grated Parmesan cheese

1/2 tsp. salt

1/2 tsp. pepper

2 cups (8 oz) shredded sharp cheddar cheese

1/4 cup bread crumbs

Cook macaroni according to package directions. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk and stir until all lumps have dissolved. Bring to a boil; cook and stir for 2 minutes.

Reduce heat; stir in the sour cream, processed cheese, cream cheese, Parmesan cheese, salt, and pepper until cheeses have melted. Gradually add cheddar cheese, and stir until cheese has melted and sauce is smooth.

Drain macaroni and add to sauce and mix well. Transfer to a greased 3-quart baking dish. Bake, uncovered, at 350 degrees for 30-35 minutes or until bubbly. Remove from oven and sprinkle breadcrumbs over top. Return to oven for another 10 minutes until browned.



**As a disclaimer - I found this on a site. I'm sorry, I can't remember where.... otherwise I would love to give the maker credit!! It might be 1000+ calories, but I don't care! It's worth every scrum-diddly-umptious bite!!

It was yummy!! An alternative to this is just throwing the velveeta & cream cheese into your ordinary cook-stove variety mac & cheese. I wanna try that one too. Your batch is soooo on the oven and headed your way :)

    Some people make parenting look sooo easy.  They are big fat liar pants.  Parenting is hard.  Kids can be awful.  They don't come with an Instruction Manual.  I started young and have grown up with them.  We have gone through a lot together.  And I would have never been able to do it without the wonderful family I have.  I started blogging because of Twin.  She said that it wasn't nice of me to take a Bad Day out on the Hubby or the Brats.  And so this began.... it's my Rantings From The Time Out Corner... because, let's face it - when I'm full on Cranky Pants... my hubby doesn't fail to make me go Sit One Out for the Team.  (for more see ME above)
